Season with lots of salt and pepper and mix well. Grease a 20cm/8in square shallow baking tin with a little more of the reserved goose fat. Spoon the stuffing mixture into the tin and spread evenly.
Reduce heat, uncover and simmer for 8- 10min. Meanwhile spoon or pour the goose fat into a large roasting tin (or oven tray) that will hold the potatoes in a single layer. Heat in the oven for 15min.
